Love eating Indian food? Want to learn how to work with spices on the BBQ? Then why not join Nila Ross-Patel at our BBQ school. An experienced Indian cookery tutor, you will be shown how to make and cook Indian food the majority of which will use a range of fresh and dry spices along with good quality ingredients. Nila’s cooking skills were handed down to her from her mother.

The sessions are capped to a group size of six persons which give you the perfect opportunity to spend a friendly, informal time with Nila combining hands – on cooking with demonstrations and of course you get to eat the food for lunch! Don’t worry if you don’t want to do the practical preparation, Nila will prepare yours.

You will be provided with recipe information sheets with an area for you to take supporting notes should you wish.

Spicy chicken/ vegetable kebabs with Naan and sides.

9.30 – 10.00 Coffee/ Tea with homemade Indian Biscuits on arrival.

10.00 – 2-2.30ish pm. Nila’s Gujarati Lunch Feast.

How to make a spice mix for chicken using a range of fresh and dry spices. The spice mix will be made alongside Nila which will then be used to make your own Gujarati chicken skewers. (Vegetarian option available – please enquire)

Coconut and Coriander naan – Nila will show you how to make the dough then you will prepare, fill and cook the naan yourself.

How to marinade and cook whole chicken thighs – Demonstration.

Indian Style Coleslaw – Demonstration on the BBQ

Cucumber Raita – Demonstration.

For dessert/ snack: Caramalised pineapple with Cardamom cream

1pm onwards – lunch and a good natter!

The Indian Alternative Burger, Scotch Eggs and sides.

9.45 – Coffee/ Tea with homemade Indian Biscuits on arrival.

10.00 – 2-2.30ish pm. Nila’s Gujarati Lunch Feast.

How to make a spice mix for lamb using a range of fresh and dry spices. The spice mix will be

used to make lamb burgers.Participants to assemble their own burger and cook them later.

Tandoori Quail Scotch eggs– Participants to make their own.

Participants to make their own spice mix for lamb burgers.This will be taken home.

How to make chilli paneer. – Demonstration.

Spinach Parata – Nila will make the dough then participants will roll their their own and cook them on the hotshelf/ griddle on the BBQ.

Dessert: Ice cream and seasonal griddled fruit
