BBQ Fundamentals

Where better to learn how to cook on a BBQ than UK BBQ School in deepest darkest Devon.

This class is intended for people who are looking to get into real BBQ, how to control heat in a BBQ, which fuel, smoke and food combinations work well.

You will learn how to make a dry rub, and when best to apply it, and when to apply a sauce or baste. Simple BBQ dishes will be cooked such as chicken thighs, steaks and roasts.

The atmosphere is lovely and laid back, you will take lots of new ideas and techniques away to get you inspired to cook outdoors.

The class will have 3 hours of teaching/cooking, and then an hour to enjoy eating the food we have cooked, chat and ask questions.

BBQ Cooking & Baking – Sue Stoneman

Would you like to learn how to get the most out of learning to cook on your BBQ?

How about cooking a cake, bread or even a pavlova?

Sue is an award winning home cook, blogger, food writer and BBQ enthusiast.

A few hours spent with Sue, here at the UKBBQ School, will inspire you to ‘fire up and get cooking’ a wide range of tasty seasonal dishes on different types of bbqs.  She will soon have you mixing dough for bread and flatbreads, whisking up delicious cakes and showing you how to get the most out of your bbq by cooking a complete meal in and on it.  The type of cooking Sue rustles up is perfect for families and also when you are entertaining friends at home.  You will get to sit down with fellow bbq students and tuck into the wonderful things you have helped prepare and cooked.  There will be plenty of opportunity to get a ‘hands on’ experience and a chance to ask any culinary questions you may have, be it about bbq or home cooking.

Sue, an award winning Home Cook, blogger, food writer and bbq enthusiast will welcome you with a sweet tasty treat cooked on the bbq.

Dishes are just an example of what you might be cooking. Sue likes to champion local, seasonal ingredients.

Timetable for the day

9.45am – arrive for freshly bbq baked sweet treats, tea/coffee, cold drink

10.00am Start to prepare your lunch
This will involve making/kneading dough for flatbreads/focaccia
Preparing the meat dish & veggie sides
Whisking up a delicious dessert
Sitting down to eat around 1pm. 

2pm (approx.) time to head for home

Drinks (hot and cold) will be available throughout the day.

Intermediate BBQ Skills

The class will include ribs, bacon weaving and how to make a fatty, and I will look to be doing BBQ scotch eggs, there will also be a bit of reverse seared steak action.

This will include a full belly and a drink, beer, cider, wine and soft drinks available.

The Intermediate BBQ Skills class is for those who are looking to step up their BBQ, and take their basic skills to another level.

The class will have 4 hours of teaching/cooking, and then an hour to enjoy eating the food we have cooked, chat and ask questions.

Indian Cooking on the BBQ -Nila Ross-Patel

Traditional Indian Cookery on the BBQ

Love eating Indian food? Want to learn how to work with spices on the BBQ? Then why not join Nila Ross-Patel at our BBQ school. An experienced Indian cookery tutor, you will be shown how to make and cook Indian food the majority of which will use a range of fresh and dry spices along with good quality ingredients. Nila’s cooking skills were handed down to her from her mother.

The sessions are capped to a group size of six persons which give you the perfect opportunity to spend a friendly, informal time with Nila combining hands – on cooking with demonstrations and of course you get to eat the food for lunch! Don’t worry if you don’t want to do the practical preparation, Nila will prepare yours.

You will be provided with recipe information sheets with an area for you to take supporting notes should you wish.

Spicy chicken/ vegetable kebabs with Naan and sides.

9.30 – 10.00 Coffee/ Tea with homemade Indian Biscuits on arrival.

10.00 – 2-2.30ish pm. Nila’s Gujarati Lunch Feast.

How to make a spice mix for chicken using a range of fresh and dry spices. The spice mix will be made alongside Nila which will then be used to make your own Gujarati chicken skewers. (Vegetarian option available – please enquire)

Coconut and Coriander naan – Nila will show you how to make the dough then you will prepare, fill and cook the naan yourself.

How to marinade and cook whole chicken thighs – Demonstration.

Indian Style Coleslaw – Demonstration on the BBQ

Cucumber Raita – Demonstration.

For dessert/ snack: Caramalised pineapple with Cardamom cream

1pm onwards – lunch and a good natter!

The Indian Alternative Burger, Scotch Eggs and sides.

9.30 – Coffee/ Tea with homemade Indian Biscuits on arrival.

10.00 – 2-2.30ish pm. Nila’s Gujarati Lunch Feast.

How to make a spice mix for lamb using a range of fresh and dry spices. The spice mix will be

used to make lamb burgers.Participants to assemble their own burger and cook them later.

Tandoori Quail Scotch eggs– Participants to make their own.

Participants to make their own spice mix for lamb burgers.This will be taken home.

How to make chilli paneer. – Demonstration.

Spinach Parata – Nila will make the dough then participants will roll their their own and cook them on the hotshelf/ griddle on the BBQ.

Dessert: Ice cream and seasonal griddled fruit

1 -2.30 ish pm – lunch and a good natter!

Nila’s BBQ Spiced Turkey Dinner (and Pud!!)

Come and join me for a relaxing and pre – festive BBQ session which will be mixture of hands on and demo. As ever, loads to eat!! We now have an indoor prep room so fear not about the cold! The fire pit will also be lit outside and all sessions are capped to a maximum of six persons. Given we are inside and outside, it may be advisable to wear layers.

Please build in time to look at the gorgeous Fordmore Farm Shop. For those of you travelling a distance, Fordmore Cafe opens at 8.30 which is on the same site as the BBQ School and The Shop.

Spiced Butter Baste Turkey Breast served with:

Pork and mango stuffing, Festive greens tossed in coconut milk, lovely crispy tatties and Nila’s surprise side dish.

Accompanied with cranberry sauce.

For pudding:

Baked Apple Crumble with cardamom infused custard (vanilla custard also available)

As part of the session you will be given the opportunity to make your own butter baste which you can take home and freeze.

You will also make sausage and mango patties that you can take home and freeze.

The session will use a turkey breast weighing approximately 2.5 – 3 kilos

Should you wish to pre – order a turkey breast/ from the gorgeous Fordmore Farm Shop to take home with you after the session, then please speak to Dominic or John to discuss on 01884 339742. Please order 7 days in advance of the session. To order a whole turkey, they will be available to collect Christmas week ie 21st December onwards.

What to do with the leftover turkey???

Nila will show you how to make garlic naan. You will roll your naan out and cook it in the wood fired oven. This will be served with a festive seasonal raita. And yes, you will be eating that too – so wear comfy clothes with expansion room!

9.30 Arrival with coffee around the fire pit. Finish around 3pm. After all, a turkey on the BBQ can’t be rushed !!!
